There are many different Mayan archaeological sites in the area, many of which most are not even aware that they are there. The four major ones would be Chichen Itza, Coba, Ek Balam and Tulum, but there are others like El Rey inside the hotel zone, El Meco by playa mujeres in downtown Cancun, Chemuyil just south of Tulum, etc.
For one day tours, usually Chichen Itza and Ek Balam go well togther, and Tulum and Coba go well together also. However, if you do a custom private tour, you could actually visit Chichen Itza, Ek Balam and Coba all in one day, although is not really an itinerary I would recommend.
