Las Quekas is a franchise that has exploded in Cancun and its surrounding area, in fact they are as far as Merida already. When I first moved to Cancun I ended up living about a block and a half away from the original "Las Quekas de la Costa". They only sell quesadillas, sopes and sodas, but the place was ALWAYS packed, at times we had to wait over 30 minutes just to get a sope and a quesadilla. The owners got smart, open other locations, and shortly after they franchised. Within 7 years, they have opened up more than 60 stores and they have a presence in Cancun, Playa del Carmen, Puerto Morelos, Tulum, and Merida (well that I know off).
These are not your Taco Bell, or local Mexican restaurant in USA that makes them with flour tortillas and the 4 cheese mexican combination. They use hand made corn tortillas, oaxaca cheese, and the topping of your choice. I usually go for their "chicharon prensando" which is pressed pork rine. They have shared beef and shared chicken also, potatoes and chorizo, rajas and cream, etc
There are actually two locations in the hotel zone. The one easier to get to, is almost right across the street from Mandala night club, right by the CocoBongos/Clubs area. The place is a very small place, like a hole in the wall type place, sortha underneath Hooters. They have the same rates in the hotel zone, which is 13 pesos per quesadilla and 15 per sope.
You can easily take a 10 to 15 minute bus ride then head back to the resort. The place is open 24/7 and is more like a grab and go place, although they do have a few tables you can use.
